When I shut down my phone and restarts it, it has about 13 gb of System data, but after s few hours it increases to 80-90 and then my phone freezes, (see screenshots below)

This issue sounds like it could be related to the software. With that being said, check that you're running the latest software version. If an update is available, secure your data with a backup and proceed with the update: Update iOS on iPhone
