Voice mail is entirely handled by your carrier. They most likely have a text notification or transcription service that is on by default. You'll need to contact T-Mobile to change it.

Ok, thanks to all who responded, for what it's worth, just went to T-Mobile store & the rep told me that Apple does use it's own voice mail system, he checked my phone, went on line and said that once you set up VTT (voice to text) it can't be changed.
also fwiw, on some help stream somewhere there was a work around posted......set your phone to English language only and have the voice mail conversion translate to a foreign language....sounds like a solution that's worse than the problem
I'm giving up....will just delete the texts
If you go under your account, plans and usage you will see an entry called “Voicemail to text”.
It is an included feature of your T-mobile plan.
Nothing to do with Apple.
I don’t know how to turn it off either.
iPhones DO use the carrier’s voicemail. You need to find someone at T-Mobile who knows how their system works.
The person who told you that is completely wrong. First level support personnel are rated by how quickly they can get you to say Yes to "did I resolve your issue?" and get you off the phone.
Escalate to someone who knows what they are talking about.
Thanks.....T-Mobile says that IOS 16 doesn't use their voice mail system & I should take it up with Apple>>>>>
