MAC OS Ventura Language and Region

I don't understand why custom formatting in for date and time in mac has disappeared this feels like a step back! I hate that I have to write MM-DD-YY where I need to do DD-MM-YY this is messing up with my excel sheets. how can I set my own format??

Language & Region is currently offering only two formats. And the first format depends on the region.

In Germany I am seeing the two formats DD.MM.YY and YYYY-MM-DD.


We can no longer force the Mac to use a long format for the date and time, where it want a short or a medium format, we can no longer force it to include the era or a timezone suffix, it is much less flexible and not what I would expect on a computer.
