I’m not going to spend 1000 bucks on a phone only to find out it will not sync with a Mac Pro running High Sierra. Hence my question here.

Are you using iTunes 12.8.3 or later? If yes then it should work. Personally I haven't synced an iPhone with my computer for about 5 years now.
