I noticed a red circle with a slash through it on all of my sent emails going back years. This just appeared after upgrading to IOS 16. I followed the old advice of checking my own contact and found myself blocked. Unblocked myself and the circles disappeared. I have no clue how I might have blocked my own contact info. Is this perhaps a software glitch in the new IOS?

Many users who have updated to iOS 16 and above must have a similar issue if the issues stated by you is due to the iOS.
Unless you state what the issue is many in this forum may not be able to respond positively to the issue you are facing.
