Hello. I’ll be visiting dubai soon and was wondering if i buy the new iphone and ships it to dubai (through apple.ae) which variant of iphone would it be? Will i be able to use FaceTime and whatsapp and so on in my country of origin which is Mauritius? Would be highly grateful if anyone could help.

It will be the UAE variant with the restricted FaceTime.
If used with a different carrier, in a different country it may enable FaceTime, but there is no way to guarantee this. You are taking chances with the purchase there and Apple will not replace the iPhone in your country if it does not have the features you want.
