I have a hacker on my iphone12. I know there is at least 1 eSIM card in the phone. Would changing the eSIM card help me rid the phone of him? He has followed me from att, t mobile to Verizon each with a new phone, new number and no data transfer

To clarify, what makes you believe your iPhone is being hacked? Is there anything suspicious about your iPhone or connected Apple services?
In general an eSIM would not be a way for your iPhone to be hacked or compromised. However, if someone else has access to your Apple ID info, this may explain how they seem to follow you from device to device if you're using the same account.
