See Backup methods for iPhone, iPad, and iPod touch - Apple Support for more about what is included in an iOS device backup. Apple don't provide any tools for extracting data from a backup, it is intended to be restored in full to a device if/when needed.

See Transfer photos and videos from your iPhone, iPad, or iPod touch to your Mac or PC - Apple Support to copy off your photos and videos.

Again, Apple don't provide any tools for viewing the data in the backup set. It can only be used to restore the state of the device, or its replacement, at some point in the future. If you want to access the photos and videos that are on your iPhone see Transfer photos and videos from your iPhone, iPad, or iPod touch to your Mac or PC - Apple Support and copy them to a different folder on your computer.

Hi,

Let's assume you want your backup data on your D: drive. You would create an empty folder at D:\MobileSync then move (i.e. cut ctrl-x, then paste ctrl-v) the Backup folder from C:\Users\HP\Apple\MobileSync to D:\MobileSync so it becomes D:\MobileSync\Backup and C:\Users\HP\Apple\MobileSync is an empty folder.

The following command should then create the junction linking the two locations together.

MkLink /J "%UserProfile%\Apple\MobileSync\Backup" "D:\MobileSync\Backup"

Use a different drive letter in place of D: if required.

Ah, that is to be expected. To iTunes it appears that nothing has changed. It throws data into the path on C: but it only takes up space on the D: drive where it really lives. You still need to make sure that there is enough free space on the C: drive before a backup can start, e.g. you will need at least 20Gb free space if iTunes estimates that the backup needs 20Gb, but once the backup has completed the free space on C: will be unchanged, and the space only used on the D: drive.

You shouldn't put anything else inside D:\MobileSync, leave that folder for iTunes to use. Even though it will backup the iPhone's camera roll into that folder it does so in a way that is only able to be used to restore the state of the device. If you want the photos and videos to edit in Windows transfer them to a new folder using the information in the last link above.
