As I said, I'll leave my home and get a notification that my MacBook has ben left behind even though it's right next to me. I'll also get the notification randomly as I drive around or go in stores. I'll go inside the store and get the notification, then I'll get it again leaving the parking lot with the MacBook next to me the whole time.

It sounds like you might be experiencing this due to the lack of internet connection on the Mac when traveling. Have you setup a home address to make sure that you don't get notified when your items are last detected at home or at an address you don't want to be notified? You can learn how to do that here:
1. On your iPhone, open the Find My app.
2. Tap Devices or Items.
3. Tap a device.
4. Under Notifications, tap Notify When Left Behind.
