Keep Messages in Settings
When messages delete after a month or after a year, am I able to exclude certain contacts from this? So everyone else’s deletes after that time except the people I don’t want it to.

Thanks for asking about excluding contacts from the Messages delete.
Those are the only options: 30 days, 1 year, or forever.
If you think you should be able to make exceptions, tell Apple here: Product Feedback - Apple
As it is now, you need to keep forever, and just delete threads you don't need or want to save space. Also, deleting Message attachments can help save space too: Settings > General > iPhone Storage > Messages > Review Large Attachments.
