Hello, CambLu,

Thank you for posting in Apple Support Communities.

Do you use optimized storage on your iPhone? If you do, this means the video stored on your phone is a lower quality version to save space. To play the video, the phone will need to connect with iCloud to play the video completely. If the connection your using is not strong, this can cause a video to stop playing while the content loads. This would also impact videos streaming through YouTube.

You can learn more about optimized storage here: Manage your photo and video storage - Apple Support

To test this, you will want to connect your iPhone to a different network and try to play the content again. If you’re currently connected to Wi-Fi, disconnect, and try to load the content using your cellular data. If this is not possible, connect to another Wi-Fi network and see if you get the same results.

You can see how to connect to a different Wi-Fi here: Connect to Wi-Fi on your iPhone, iPad, or iPod touch - Apple Support

Kindest regards.
