To get accurate speed readings during interval runs, it is important to know at what frequency the Ultra watch recalculates the speed. Where does one find that information?

I saw Apple's guide for the ultra. Let me be more precise about what I am looking for. Today's exercise programme for me reads (after warm-up and before cooling down periods) :
3 x 4:00 @ 6:24/km + 4:00 @ 9:19/km *
This means three series, each of 4 min at 6:24 min per km followed by 4 min at 9:19 min per km.
I need to know all through these intervals whether I am running at the requisite speed. What I want to know is how quickly the watch adjusts the "current speed" reading after a speed change and, possibly, whether the reading is immediately accurate or only after a number of seconds/adjustments.
I have tested the distance reading of the ultra and that is spot on, whether walking or running.
