I am in the UK.
In my AppleId Account I do have credit available and a credit card setup as payment.
How can I setup the payment preferred method this way for all purchases.
1) Use credit 1st
2) If not enough then default on credit card.
In the setup the only preferred method available is Credit card, I do not have the option to choose 'credit'

It should default to credit and then credit card when making a purchase. If it isn't doing that, contact iTunes Support for assistance. See the Apple Support articles below for contact information.

It seems to be like this for my Apple music subscription bundle.
But since there is no 'physical' option like on Amazon for example, I was wondering if this would be always the case if I buy anything online (Apps, HW, etc...).

You are welcome. If you buy from Apple, it should be cash first and then the credit card.
