With streaming boxes like appletv channels is a somewhat elusive term try reading

Use your Siri Remote or Apple TV Remote with Apple TV - Apple Support

If you use a TV provider app with a large number of in-app channels, then possibly they support the channel up|down buttons in the software remote on iPhone (or iPad).
