Continuing AppleCare Once Expired:

I wouldn't know, but you might be offered by Apple to continue your AppleCare coverage, once it has expired. Apple sometimes offers it, and sometimes they decline it. See here: Continue your AppleCare+ Coverage - Apple Support

Sixty days from when you bought it, or a year if Apple offers that in your country.
