My iPhone 13 used up some 600MB of cellular data during the night while in Sleep mode

How is that possible?

I was asleep and had no active apps running like Youtube or Tune-in, which I use during the day on WiFi.

The phone was charging so WIFI should have been on for any background activity.

At 11:30 I got a message that I had used up 80% of my 3GB of cellular data. At 3am I got a message saying I had run out of data. So while on WIFI the phone used 600 MB in 3 hours while I was asleep.

How do I prevent this from happening?

Did you check in Settings/Battery, which app showed the longest activity during that time?

If you have found the culprit, you can disable the usage for mobile data for this app in Settings/Cellular/Mobile Data

I didn't know Battery had all this information. Thanks for pointing it out.

Anyway, there is no activity in the middle of the night so the provider is attributing the usage wrongly.

The app that seems to be using a lot of data is Tune-in in "background" mode. That was the culprit. It was on for 7h after I used it on a bike ride for 1 hour. At the end of the day my battery was very low which never happens. I'll have to be careful with this app.
