Auto Shut Down and Wake
Since the new update has come out I do not see where I can change the time of when my Mac starts up and shuts down daily. Where can I find this option now? It is no longer in energy saver prompt.

Unfortunately a few options has been removed in System Settings since the introduction of macOS Ventura. Hope Apple will bring them back.
In the meantime, a workaround is to type some Terminal commands if you're familiar with command line interface:

Yes, if you have executed correctly the command then the scheduling should be set. Nothing is "visible" in the graphical user interface of macOS.
The article states that the command
pmset -g sched
should list the configured schedules. Check if it lists the schedule you executed.
Yes it has been removed from System Settings and it’s a shame…
please contact Apple Support and send feedback to file a feature request for them to bring that feature back.
I have tried that. Although I have no idea how to do it. I assume when I ran the prompt in a shell it worked.
