I don't seem to have any options listed in the Energy Saving platform about time before screen saver comes on, hard drive spin down, etc. See below.
(Maybe not coincidentally) my new Mac is often crashing whenever it goes to sleep.
thoughts? clean install?

Sleep is unnecessary and should be disabled. Shut for long absences/idle overnights (i.e. do not manual-sleep), and for regular operation, use the settings exactly as shown here Wake up a remote Mac mini - Apple Community, should fix.

go to Apple > System Settings > Displays > Advanced.
