Gmail does not delete on both iPhone and mac
How can I sync my phone with my Mac - such as deleting emails, marking as unread etc

It sounds like you have some syncing questions and we want to help.
Your devices actually sync with the Google servers, and then when the devices check the Google account they receive the updated information.
Make sure each device is signed into the Google account correctly here:
Add an email account to your iPhone, iPad, or iPod touch
Use your internet accounts on Mac
"Change account features and details
- On your Mac, choose Apple menu
> System Settings, then click Internet Accounts 
in the sidebar. (You may need to scroll down.) - Click an account on the right, then do one of the following:
- Turn features on or off: Turn on or off any feature you want to use with the account.
- Change account details: Click the Details button at the top. For some accounts, the account user name or email, a description, and other details are already shown, and a Details button is not available."
