If I change my Apple ID email will I lose content and settings associated with the old Apple ID email?

No. If you only change the mail address, everything should remain the same. From the article below.
If you no longer use the email address that's associated with your Apple ID, you can change it. You won’t lose access to your contacts, purchases, or other account information.
