You should be able to end Guided Access using the steps below:
Triple-click the Side or Home button, enter your Guided Access passcode, then tap End. Or if you turned on Touch ID or Face ID for Guided Access, double-click the Side or Home button.

If your iPhone is completely unresponsive, you can force restart your iPhone using these steps: Force restart iPhone - Apple Support
1. Press and quickly release the volume up button.
2. Press and quickly release the volume down button.
3. Press and hold the side button.
4. When the Apple logo appears, release the side button.
