stop sharing texts between phones on same account
Had to reset husbands apple watch on our itunes account and now I get text that are meant to be sent to his phone number. How do I stop this and make sure he gets his texts not me?

It appears that both of you are sharing the same Apple ID. This is the underlying reason why you are getting his texts. Both of you should be using separate Apple IDs so that the data, such as texts, calendar events, notes etc, do not overlap.
If you must share the same Apple ID, then there is a workaround which is not clean but will somewhat do the job.
For the Messages isolation - Perform the following on both iPhones:
Open Settings ➔ Messages ➔ Send & Receive: Ensure that ONLY ONE Phone number is checked and that is the phone number of that particular iPhone. No email accounts should be checked. On the same screen, select start new messages from and choose the number of that iPhone. On the same screen, select Text Message Forwarding and set the switch to the OTHER iPhone to OFF.

"Our iTunes account" ? If you are sharing the same account you will find it very difficult to lead separate iphone lives.
However if you insist, both of you try this on your phones
Settings, Messages, Turn off iMessage
Settings, Face Time, Turn off Face Time
Restart the phone.
Settings, Messages, Turn on iMessage, SMS, MMS
Settings, Messages, send & Receive, select your number which should now be there. NOT your "itunes account"
Settings, Face Time, Turn on Face Time selecting your number
