can i set up the iphone 14, without activating eSIM, to use without a carrier and just wifi? This is how i currently use my iphone, unlocked, without a carrier and just wifi, like an Ipod

You need a SIM to activate your Device to ensure the iPhone is not locked to a Carrier. Get a SIM from your friend temporarily for activating after activation you can use the device without a SIM.
