Why will Apple not allow us to remove their stock apps that we never use like the Stocks app? I have not used it on purpose on any device in 14 years. Is it due to its usage on some watch faces?

You can delete the Stocks app from your phone. Usual method-- touch, hold, wiggle, X, say you really mean it a couple of times. This seems to remove it from the watch, as well.
