I currently have my gmail address as my Apple ID and when I set up iCloud mail on my phone it asked me to create an @icloud.com address which now shows under contactable at and cannot be deleted. Is there any way to remove this iCloud email address from my Apple account?

No, not without deleting your AppleID and everything tied to it. But you don’t have to use that iCloud email address if you don’t wish to. In messages and FaceTime settings you can turn it off as a “reachable at” address.
