Why would my Apple Pay use an address from 7 years and 4 phones ago on my new iPhone? I don’t even know where it could find it on anything. I’ve been using Apple Pay without issue on my old phone for a long time and suddenly this new one has an address to an old office from forever ago before any of these features even existed.

Check here -> Sign in to your Apple ID account page and edit / update your Apple ID details.
-> edit your billing addres.

To change the billing address you can do (macOS & Windows OS) via iTunes
Start Music -> Click on iTunes -> side bar click iTunes Store -> go to Account (top bar) -> View Account -> Sign in -> Apple ID Summary -> Billing Address -> Edit.
or
(iPhone & iPad) Go to -> Settings -> tap your Profile -> Payment and shipping -> Change Address.
Edit the Address -> tap Done.
Check here -> Sign in to your Apple ID account page and edit / update your Apple ID details.

Most likely it isn’t the phone; the merchant you ordered from had the old address on file.
I appreciate the reply, but it doesn’t answer the question. I guess I just won’t use Applepay so it doesn’t happen again. Took me 30 minutes to cancel an order when I realized it was shipping to a building I worked at before Apple was invented.
Unless you know how I can purge it from the system forever.
