I cannot get the apple logo in my new mac air m2 by using the shift+option+k shortcut.

What do you mean exactly by "India's input source"? Devanagari?
It's also important to know that not all fonts have in them, so you might need to change fonts.
You could use a macro app to add the Apple icon when you type a given letter combination or a key congbination like you're trying. Go to the App Store and search for macro.
I use a text string of "xappl" to get with Keyboard Maestro.
I mean these input settings under keyboard in the settings app, we have to choose the U.S or U.K input to get the shortcut to work but it doesn't under ABC-India or Indian input keyboard, whereas Devanagari is for Hindi Input.
You can probably use a text replacement to produce when needed
