No red phone icon on AW Series 8 when iPhone off

Hello, When I was in Paris recently (rather than home in the UK) and turned off my iPhone 11Pro at night, the red phone icon appeared at the top of the watch until I restarted my phone in the morning. When I am home and turn off the iPhone at night (or just now to test) NO red phone icon appears. Should the red icon appear on the watch any time and any where when the iPhone is off or, somehow, does the appearance of the icon have something to do with being off my home wifi network/travelling? Thank you.

An Apple support advisor to whom I spoke about a different issue, when asked about this icon issue thought the lack of red icon might be a pairing issue and that I might need to unpair and repair my Phone/Watch. I've now done this and, still, sitting at home when I turn off my phone there is no red iPhone icon on the watch. I guess I have to head back to Paris and see if it appears there again ... .

If the icon IS supposed to appear, even at home, I would be interested to find out how to discover what the problem is with my devices. Suggestions welcome!
