Information on display refresh is limited. I have a new macbook pro M1. I have only 60hertz with a 16 inch screen

Correct. Select Pro-Motion for higher adaptive refresh rates up to 120Hz.

The Mac will dynamically raise and lower the refresh rate then up to 120Hz when it decides it's needed.
