iPhone 7 & Apple Watch SE won’t pair

I have an iPhone 7 with iOS 15.7.1 that says it is up to date. I have a new Apple Watch SE that just arrived. I’m trying to pair them and the phone says ‘iPhone out of date’ —- the paper that came with the watch says it needs to be iPhone 6 or later. HELP

I dug in a bit more on the Apple site, and they have stopped updating the iOS for iPhone 7 @version 15 etc.

Reset your iPhone go to general and then click check for updates iOS 16.1.2 is out, so yes your phone is not up-to-date
