I followed directions to pair my IPhone 8plus with my Apple Watch SE 2nd generation and it will not pair. It says my phone is too old. Yet I was told it was compatible. Help or I will return it

Its true as I tried pairing with an 8 plus, you need a watch on firmware below watch iOS 10. Or an iPhone on iOS 17.
Is there a way to downgrade apple watch OS, so that it connects to iPhone 8.
