Can a MacBook Pro M1 extend its display to two external monitors?

I have countless dongles and none of them accomplish this. I finally purchased the CalDigit mini dock for extending my MacBook Pro M1 display to 2 monitors and it did not work. Only one monitor displays and only from the first HDMI port on the dock. I'm having a hard time understanding why my M1 cannot accomplish what my much older MacBook Pro from work can. I feel like I'm just wasting money. I need both external monitors ON and Extended. What do I need to make this happen? Thanks
