Zoom in/out with the mouse scrolling wheel or a key shortcut with iOS

Regarding zoom controls on the iPad, if using a trackpad you can do the following: "Zoom. Place two fingers near each other. Pinch open to zoom in, or pinch closed to zoom out." Find this information and more here: Trackpad gestures for iPad
