This is a great question. If you already have the iPhone in your possession and are actively using it, you can continue to use it with your new provider. The device should already be ready to go with your new provider but you may need to unlock it. This process is fairly simple and your mobile provider can help you further. If you received the iPhone but haven't set it up yet, it would be totally up to you if you want to set it up now and use it before switching or if you'd rather wait. Neither option would be problematic at all so it just comes down to preference.
