Why does the gmail app continue to freeze up after using if for about 30 sec?

Take a look at this support document for troubleshooting an app. If an app on your iPhone or iPad stops responding, closes unexpectedly, or won’t open - Apple Support
If that does not fix it, then you need to contact Google support as their mail app is not an Apple product and Google is responsible for troubleshooting their app.
