How can I update my phone without WiFi I have unlimited data

Unless you have a 5G iPhone, are on a 5G network and one that supports that feature, you cannot update over anything but WiFi.
All non-5G iPhones can only use WiFi to update, or when connected to a MS Windows or MacOS computer (Update your iPhone, iPad, or iPod touch with iTunes - Apple Support)
