Running Mac on AC Power
I have the M1 Mac Air (2020) and I was wondering that if once my battery reaches 100%, can I leave my charger plugged in and run off AC Power rather than using my battery?

Yes you can leave it on AC power. Your Mac controls the charging, not the power adaptor.
