If that contact was already added to a Group FaceTime call, they can't be removed from the call. The "Add a person to a Group FaceTime call" section of this resource has more details: Use Group FaceTime on your iPhone, iPad, and iPod touch - Apple Support
If needed, a new Group FaceTime call can be created that doesn't include that particular contact.
