we haven’t use this mini iPod for a while. Now I’m trying to use it for my son. Unfortunately the email and password that is required, is too old, I don’t have it no more. Need new email and Apple ID. I did try to add or create my iCloud email from my phone, and still shows the old one 🤦🏻♀️ we no longer have access to that old email

If your iPod mini is still linked to a different iTunes library, then you'll just need to restore it and then you can start syncing with a new computer. You can restore it with these steps:
Restore your iPod to factory settings
You can also find additional info for using your device in the iPod mini User Guide Keep in mind the iPod mini is an obsolete device that hasn't been sold since 2005, so some terminology in the user guide may no longer be correct. For example, if you're syncing with a Mac, many of the instructions for that refer to "iSync", which no longer exists. These days you would sync an iPod through Finder on the computer.
