Do gift cards give change?

If I get a, say, $20 gift card from a friend, then I pay for a $15 in app-purchase, what happens to the other $5? Just want to know.

Apple Education Gift Card I got an apple education gift card after buying a macbook from apple. I then bought and ipad air and a pencil with it a few weeks later. When finalizing my ipad purchase the total was near $900, I used the $200 gift card and It said It would be near $700. 3 days after buying it, Apple charged me $750 thats how much it should have charged me. Now today I got charged an additional $150. Why is that? That brings the total to near $900 that much should not have been charged.

Sorry. I put it under Apple card, not gift card, as there just wasn't a gift card option in the topics section.
