Is there a way to password protect documents in Numbers and also a .cvs document please?

As for password protecting a .csv file you would have to create an encrypted disk image file (.dmg) file with Disk Utility and then copy the .csv into the .dmg file. See Create a disk image using Disk Utility on Mac - Apple Support
