Old iPhone won't cooperate during Quick Start

I got a new iPhone (iPhone 11) for Christmas and have spent most of my day so far trying to set it up. I had to buy more cloud storage to back up my old phone (iPhone SE 2nd Gen) to even START the process, and when I was almost finished with the Quick Start process, my SE decided that it was the perfect time to perform a backup which prompted my 11 to restart the process. Now, when I try to start the process over again, I can't make it past the dotted image scan (not sure what to call it) because my SE exits out of the Quick Start screen as soon as I scan the image. It still turns on fine but just stops the Quick Start and my 11 is still on the image screen. I tried setting it up manually as well but couldn't do it that way. Suggestions? I'm starting to lose my mind haha.

This sounds incorrect. Once you start Settings > General > Transfer or Reset iPhone > Transfer, you should see this:


Regarding the rest of your post, I suggest not using Quick Start. Use the iCloud process described here.

Transfer data from your previous iOS or iPadOS device to your new iPhone or iPad - Apple Support
