Lost notes on a stolen iPhone

On Holiday where i was pick pocketed. However i had no data or internet connection the time the phone was taken. I had many important notes i had made that's had not yet been synched when the phone was taken.

I have my mac and other apple devices but none of the notes i documented is coming up?

How would i be able to retrieve these important information in my notes now that the phone that it was stored on is stolen and missing?

If your iPhone was not able to sync those notes to iCloud or something similar, then those notes only exist on your iPhone.

If your iPhone is gone, then your notes are gone. Stolen iPhones are very quickly erased and sold to people who do not know how to check for Activation Lock.

Also would you know how i would track it down with it switched off?

Assuming you have enabled the Find My option on the phone, the phone needs good battery power and a good Internet connection to be able to broadcast information about its location.

If the battery has run down, or the phone is not connected to the Internet, it will not appear on the Find My map. If the battery has run down or the Internet connection was lost in the last day or two, the Find My map might display a "Last Known Location" for a day or two.
