How to use the digital keypad for m-dashes and cursor movement

When I am writing on my iPad using the digital keyboard, I often want to write m-dashes and n-dashes. But I haven't been able to figure it out.

Also, sometimes I want to move the cursor just a character at a time. I try using my finger on the screen, but I don't have the coördination to do that. Is there a way to do that using my digital keyboard?

To accurately move the on-screen cursor, touch-and-hold the spacebar - the entire on-screen keyboard will turn grey. Without lifting your finger from the screen, while watching the cursor, simply slide your finger.

While the keyboard remains grey, it has been transformed into a trackpad - with which to freely move the cursor. When the cursor is placed as required, lift your finger from the screen.

If by "digital keypad" you mean "screen keyboard", then you need to create text replacements for such characters
