Wake on Wrist Rise/Crown Up

I’ve switched both of my Wrist Rise/Crown Up settings to off mode.. but how/why does it’s wake my display when I’m moving my wrist e.g playing drum set

You might try this instead:

Tip: To temporarily prevent your Apple Watch from waking when you raise your wrist, use theater mode. For more info, see the 'Wake the Apple Watch display' section in:

Turn on and wake Apple Watch - Apple Support

and the 'Use theater mode on Apple Watch' section in:

Use Control Center on Apple Watch - Apple Support
