I need to log out of my daughter's ipad and change the apple ID to mine but because we are on family sharing, it won't let me log out.
I've tried erasing and resetting the ipad with no luck.

In what way won't it let you log out? Did you try the things suggested here? --> Sign out of iCloud on your iPhone, iPad, iPod touch, Apple TV, or Mac - Apple Support
Again, what happens when you try to erase the device?
The sign out button is grayed out and says "sign out is not available due to restrictions"
When I tried to wipe the ipad, when I started it back up after the reset.... everything was still there as if nothing was wiped.
It was the screen time that wouldn't allow me to turn off the apple id.
