e-sim does not work

bought in Ukraine apple watch cellular , I brought it to Poland, connected the Orange SIM card so that I could have a connection on the watch, but it still does not work, it says that the Ukrainian device does not support a Polish SIM card, please tell me what to do??

Contact Orange in Poland directly for help with the watch. Orange does support e-Sim and there would be no hardware difference in a watch sold in Ukraine compared to one sold in Poland. Unless the watch you purchased in Ukraine was not purchased from Apple or an Apple Authorized Seller. If you bought a gray market watch, which for example was intended to be sold in the US, Canada, Mexico markets, it will not work in Poland as a cellular watch.
