When you say "over-updated" what you presumably mean is that you're receiving an error along the lines of "This app requires iOS 14 or later. Please update your device" - yes...?
The issue isn't that the app is, to use your words, 'over-updated' it's that the iPhone 5 is, in tech terms, an ancient relic. It was released over 9 years ago (September 2013) and, because it only has 1GB RAM, it cannot be updated past iOS 12.5.6.
If you need to use this app, the only solution is to get an iPhone which is capable of running the latest iOS versions, you can do NOTHING with your current one. Developers have long since stopped supporting 1GB devices.
@SravanKrA - I normally rate your responses, but you just automatically did a copy-pasta and didn't actually take the time to read his question - at least not properly because, evidently, you missed the bit about him having an iPhone 5S.
Your response, this time, isn't helpful as what he presumably meant by the app being 'over-updated' was that he's receiving the 'this app requires iOS 14 or later..." error. He doesn't understand that he cannot run modern apps on an iPhone which is over 9 years old and only has 1GB RAM.

This is in fact not correct. There are some developers who still support ‘relics’.
