So what is your question exactly?

Your tiltle and question are 2 different things.

There is no way to uninstall iOS versions.

Where on your iPhone are you seeing this MacBook you wife uses?

If she is using your Apple ID on the MacBook in System Settings / Preferences ➡️ Apple ID and as such you see her MacBook in the Device list in Settings ➡️ Account (top of settings), then you would need to sign out from your Apple ID on her Mac, and sign in with hers.
