MacBook stolen. Erase pending???

My MacBook Pro was stolen from my backpack 3 weeks ago. When I discovered that it was gone, several hours after the theft, I connected to Find My and enabled Lost Mode and Erase this Device. My MacBook appeared in my list of devices, localised at the train station where the theft occured. (Apparently the thief opened the MacBook just after the theft, but hours before I discovered it missing). It remained in my list of devices, always at same location as being the last place it was located, with 'Erase pending' until I received a text message from Apple Assistance 5 days ago stating that my lost MacBook Pro was online, with a link to show the position. Unfortunately I saw that message a couple hours too late so when I connected there was nothing. And since then, my stolen MacBook no longer appears in my list of devices, lost or otherwise! Today I received a similar message stating that my lost MacBook Pro was again online, and when I connected to link, nothing, and furthermore it is still missing from my list of devices.

I've accepted the fact that my MacBook Pro is gone forever, but can't understand why it is no longer showing in my list of devices, while I received message that it is online.

Is there anyway of knowing if my MacBook Pro was indeed erased? I am sure that the thief could never access using my password, but could they access the info on the hard drive otherwise? And if they completely reformatted the drive and connected to the Internet, would it somehow still be connected to my apple id (perhaps with the device serial number)?

Any insight will be appreciated!
